  1. Chop sweet potato and pineapple into pieces if needed for your blender. Add the rest and blend until smooth. If your blender is not high-powered, you might want to microwave or steam the sweet potato for a few minutes first to soften it . Courtesy of Green Blender.

  1. Peel plantains and slice into ~1/2 inch slices.
  2. Add plantains, water, and juice from one lime into a small saucepan. Bring to boil, then cover and simmer until soft (15-20 minutes).
  3. When soft mash with a fork and season with salt if desired.
  4. Add beans and salsa to a small saucepan and bring to medium-low heat stirring occasionally for 3 minutes.
  5. Place a quarter of plantains and beans and salsa onto each warmed tortilla.
  6. Fold in the sides and roll up!
  7. Optional: I like to serve with a lime wedge and fresh mango.
