Mango Ceviche

Traditionally ceviche is a dish made with seafood, however this unique version is simpler and gives you tons of flavor completely plant based!

Instructions
  1. Slice onion and place int a bowl of ice water to sit 10 minutes while other ingredients are prepared.
  2. Chop mango and place in a bowl with half of the lime juice and salt. Test and increase lime juice to your liking.
  3. Add jalapenos, cilantro, and drained onions.

Hawaiian Rainbow Fruit Sticks

Not living in Hawaii means that rainbows don’t come my way frequently…so to bring myself back to the islands I decided to make my own in the kitchen!

  1. Wash your fruit!
  2. Chop the mango, pineapple and kiwi into thick pieces about an inch thick each way.
  3. Slide one of each fruit onto a wooden skewer starting with blackberries all the way to strawberries.

  1. Drain and rinse white beans and place in large bowl.
  2. Chop avocado, tomato, and onion and add to the bowl.
  3. Gently mix together.
  4. Top with the juice from half a lemon,salt, and dried basil.

Sweet and Spicy Avocado Toast

Avocado toast is usually too good to mess with… but this recipe adapted from The Vegan Roadie, has added fun flavors to the simple dish.

On this toast we will be adding the healthful but bitter green arugula! A little too bitter by itself is calmed down with the sweetness from pineapple and a spicy surprise from sriracha!

I’ve added an optional squeeze of lime juice to the dish as that is my favorite flavor to add to avocado.

  1. Toast 2 slices of bread.
  2. Mash avocado. Optional: add a squeeze of lime juice and a dash of sea salt.
  3. Cut the fresh pineapple into small cubes and mix with the avocado.
  4. Top the toast with arugula, avocado and pineapple smash.
  5. Drizzle on the desired amount of sriracha.

Tasty Tostones! (Fried Green Plantains)

If you’re like me, it’s hard to resist picking up a bag of plantain chips at the store…what if I told you Tostones were easy to make, way more satisfying, and better for you!

One of my favorite snacks, Tostones, are twice fried green plantains, a very popular dish in many parts of the Caribbean and Latin America.

This recipe is simple, quick and delicious!

  1. Peel plantains by cutting the ends and slicing the peel lengthwise. Make sure you don't cut past the peel into the inside!
  2. Cut each plantain into slices ~1 inch thick.
  3. Heat coconut oil in pan over medium heat.
  4. Add the plantain slices without letting them touch each other. You may need to do this in two batches.
  5. Fry the slices on each side until golden brown approximately 2 minutes each side.
  6. Remove slices and place on cutting board. Using a flat bottom glass smoosh each slice to flatten out to ~1/4 inch.
  7. Return to pan and fry the slices about 1 minute each side.
  8. Remove and sprinkle with sea salt.
  9. Optional: Lime juice goes with about anything! Squeeze a little bit of juice on your freshly made tostones!
